Frittatas: The Perfect Egg Dish

Frittatas are basically fancy Italian omelettes. Here’s our microgreen modified version of this easy frittata recipe!

If you add your microgreens to the recipe too early, they might wilt. I like to chop up my microgreens with a chef’s knife and sprinkle them on top of my slice of frittata. (You could also shred your micros with your hands.)

I think frittatas are easier than an omelette because you don’t have to flip the eggs. And they’re much tastier!

Just make sure you have a skillet with a metal handle (no plastic). I use a cast-iron skillet. Cook the eggs (and pork, cheese, onion, garlic) until the eggs solidify. Then just put the entire skillet in the oven at 400 degrees until the center is no longer wobbly and the edges are golden-brown!
